Kinvara Organic Smoked Salmon with Pasta & Asparagus.
This recipe cries out for a Glass of wine or two, to go with the rich creaminess of the sauce. We suggest finding a nice Chardonnay or Pinot Gris.
350 grams thin asparagus, trimmed
450 grams pasta
1 tablespoon olive oil or butter
1 cup onions, in small dice 3/4 cup fennel or celery, in small dice
1 1/2 cups half-and-half
1/4 cup dry white wine
200 grams Kinvara Organic Smoked Salmon finely sliced
Chopped chives to garnish
Instructions:
- Bring a large pot of salted water to a boil. Blanch the asparagus until still slightly fibrous but mostly cooked, about 3 minutes for thin asparagus. Remove with tongs or a spider (large mesh scoop) and place in a colander to cool. Immediately add the pasta to the boiling water and cook according to package directions. Reserve 1/2 cup of the cooking water, then drain.
- Meanwhile, heat the oil or butter in a skillet over medium heat. Add the onion and fennel and cook until tender, stirring occasionally, 10 minutes. Add the half-and-half and simmer for 3 minutes, reducing slightly. Add the wine and return to a gentle simmer.
- Chop the asparagus into 1/2-inch-long pieces. If you like, reserve a few of the tips to use as a garnish.
- At the last minute, add the Kinvara Organic Smoked Salmonand asparagus to the sauce. Heat for barely a minute, because the salmon doesn’t taste as good when it overcooks, then season to taste with salt and pepper.
- Add the pasta to the sauce, stirring in some of the pasta water if necessary. Serve immediately in shallow bowls, garnished with the chives and extra asparagus tips.
Kinvara Organic Smoked Salmon Pizza Recipe
Here is a quality recipe for St. Patrick’s Day Celebrations!!! This is nice and quick to make so you can spend more time enjoying the Celebrations!!! Happy St. Patrick’s Day!
(Serves 4)
350 grams of Kinvara Organic smoked salmon, thinly sliced
4 brown onions, sliced & evenly
1/2 cup of sour cream
2 tbs of capers
Fresh dill
4 tbs of olive oil
Juice of 1/2 lemon
Sea salt
Method:
- Slice the onions thinly and evenly. Heat oil over a medium-high heat in a large, heavy-based fry-pan. Add the onions and saute until a deep golden brown. This process will take about 25 minutes. Start frying the onions on a medium heat and then gradually lower the heat. Stir the onions occasionally and make sure they don’t burn.
- Pre-heat the oven to 300F.
- Roll out the dough and then brush wills a little olive oil on both sides. Place dough on a baking tray and then bake for 10-15 minutes. Bubbles may rise in the dough but just pop them once the dough is cooked.
- Remove the pizza from the oven and then top with caramelized onions, and Kinvara Organic smoked salmon. Sprinkle on capers, dill and top with sour cream.
- Finish with a squeeze of lemon juice and a sprinkle of sea salt.

Smoked Salmon Mini Quiches Recipe
This week we have something very simply to make yet that tastes absolutely mouth-watering! This recipe makes about 22 Mini Quiches, which will not hang around long when you hand them out.
Ingredients:-
20-23 short crust pastry cases
1 egg (plus 2 egg yolks)
300ml double cream
100g finely chopped Kinvara Organic Smoked Salmon
1 large tbsp. chopped fresh chives
1 pinch of cayenne pepper (optional)
Method:-
1. To make these Kinvara Organic Smoked Salmon mini quiches you must first of all preheat the oven to 180C/350F/Gas Mark 4.
2. Place the readymade pastry cases onto a baking tray and place a little salmon in each case.
3. Sprinkle chives in each of the pastry cases. Mix the egg / egg yolks, double cream, cayenne pepper together and divided the mixture into each case.
4. Bake in the oven for around 7-10 minutes. Either serve immediately or allow to cool then place in the fridge until required. A simple, yet very tasty recipe
